Hello Chicken!

Hello everyone, I'm Bailey Bug from McKinney, Texas and I love to cook sometimes. What I mean to say is, when the mood strikes me to cook I'm unstoppable, when it's been a hard week and it's Friday after work, I am really good at ordering Chinese food.

One day in the kitchen Preston, my sweet husband said, hey~ what are you making for dinner? Me: Chicken. Preston: What kind of chicken? Me: I'm not sure yet.

He looked at me puzzled and said, you should write a blog about all the things you just make up in the kitchen, because most of the time it's delicious. I tend to make up my own recipes when I haven't been to the grocery store,
or don't feel like going.  So here we are. My first post is about the chicken dinner mentioned a moment ago, I made this up as I went along and took pictures. I hope you enjoy and please let me know if you have any comments!!!

*** Disclaimer: I am not going to go in a lot of detail like some blogger recipes do, no, if you are reading this you should already know the basics and be able to see the pictures and put 2 and 2 together. Now, if I do go into detail about something, you should probably pay attention - you'll know by the "***" 's.

Step 1: Pat chicken dry with a paper towel, and sprinkle the following things on (adding more or less of what you like) JUST ON 1 SIDE.

Spices I used. They are lined up in order of what I used least (cumin) to most (flowery pot of black pepper) and yes I do realize I should have lined them up the other way going most to least but I'm a rebel.

Step 2: Using a heavy bottom, high sided pan at medium heat, put some oil and butter in there. Let it melt up some.
look at that yummy goodness. Also - look how cool my pot on the stove is! It's like a crazy town.

Step 3:  With the seasoning side down put the chicken in the pan. My pan only holds 3 breasts at a time, but since it's just me and Preston that's cool. I just make 3 and then 1 so we have lunch for the next day.

*** When putting the chicken into the pan do this: put chicken into pan, after about 10 - 15 seconds lift it back up so the butter goodness can get back underneath, and continue. This also helps it from sticking.

Sad little lonely chicken. This is seasoned with only pepper - I'm not sure why I don't have a picture of one in the pan with seasoning.

Step 4: While it's cooking, put seasoning on the naked side. Again, use more of what you like, less of whatever, I'm not eating it so use what you like. I like to use a lot of black pepper and chili powder.

Step 5: Cook the chicken for about 9 minutes give or take, flip it over adding more butter. I didn't say it was healthy. You can obviously adjust the butter horde to something like coconut oil or something, but I have no clue how that tastes with this so don't blame me if it sucks.

Step 6: Cook the chicken until it's done - I like more dry chicken because I know there's not any salmonella hiding trying to jump out and ruin my life.

Step 6: Eat it. Now, obviously you are smart enough to know during this time you need to make sides like, mashed potatoes, green beans, etc. If you just want to just eat hoards of chicken I am not here to judge, more protein for you. You go Glenn Co-co.

that is potatoes boiling with pepper and onion. They will be mashed potatoes with cheese.
This was a last minute idea - broccoli, butter, pepper, a little water, aluminum pan with a lid in a 350 oven for like, 10-15 minutes-ish.

I'm thinking something beefy sounds good next, but I also like shrimp. We'll just play meat-roulette and see where we land. Thank you for reading!!!
